Vanilla Bean In the Kitchen

Cut off an inch, scrape out the seeds and use directly in recipies. A little goes a long ways.

Make your own Vanilla Extract

Unless Orgaic Certified, most vanilla extract does not even contain vanilla.

After removing seeds for recipies, place the empty pods in a glass container with Everclear, 2 inches per ounce of alcohol.  Seal and place in cool dark place for 3-6 months.

Mexican Cinnamon Horchata Rice Drink for 6

1 1⁄3 cup white long-grain rice, uncooked

5 cup water, divided

1 cinnamon sticks

1 cup coconut milk

1⁄3 cup brown sugar, or to taste

1⁄4 inch vanilla bean

  1. Put rice, 2 cups water, and cinnamon sticks in a blender and process until the rice and cinnamon are coarsely ground. Add remaining 3 cups water and thoroughly blend. Pour mixture into a pitcher and refrigerate for least 4-5 hours or overnight.

  2. Strain mixture and compost rice. Stir in coconut milk, brown sugar, and vanilla bean. Serve cold.

A study in the journal Annals of Botany showed that coffee leaf tea has extremely high levels of mangiferin, a compound often found in (and named after) mangoes. Mangiferin is thought to be an anti-inflammatory agent, as well as a protector against diabetes. But the study also found that coffee leaf tea is higher in antioxidants than pretty much anything else we know: higher than green tea, higher than blueberries, and much higher than regular coffee.

Allspice is a fruit of a plant called Pimenta dioica.


This Pimenta dioica can be found only at Greater Antilles, Southern Mexico, and Central America.  Allspice has a unique aroma. It’s like a combination of pepper, nutmeg, clove, and cinnamon.


The most important health benefits of allspice include its ability to act as a pain reliever, increase circulation, protect the gastrointestinal system, improve mood, boost the immune system, eliminate fungal infections, lower blood pressure, and reduce inflammation.

Coffee Cherry Cascara

What we call a coffee bean is actually the seeds of a cherry-like fruit.


Coffee trees produce berries, called coffee cherries, that turn bright red when they are ripe and ready to pick. The fruit is found in clusters along the branches of the tree.


The skin of a coffee cherry (the exocarp) is thick and bitter. However, the fruit beneath it (the mesocarp) is intensely sweet and has the texture of a grape. Next comes the parenchyma, a slimy, honey-like layer, which helps protect the beans. The beans themselves are covered by a parchment-like envelope called the endocarp. This protects the two, bluish-green coffee beans, which are covered by yet another membrane, called the spermoderm or silver skin.


The mesocarp is used for compost but now we have created a new revenue stream for the marginalized coffee producers; Cascara for infusion and also ground into Coffee flour as an alternative gluten-free baking product.

For over 50 years we have been visiting Los Primeros Pobladores (First Nations), the Totonacos, the Nahua, the Popoluca and the Maya, learning about the historical medicinal uses of the materials provided by nature, and their benefits to humankind.


During our journey, we discovered the Melipona stingless bee honey and our lives were transformed.

Thanks to this little bees pollination skills and tenacity, we are bringing back the vanilla industry in Mexico as well well as many other delicious goodies harvested from the rainforest such as Gourmet Cinnamon and Allspice.

Sustainable Melipona Bee Honey Harvest

We respect the bee and it's home!

We harvest at night when the bees are least active and extract the honey with syringes to minimize stress for the bees and damage to the hive.

We only remove some of the honey and very little pollen and propolis.  Rarely do we remove the wax except for specialized medical treatments.

During cold weather when the bee cannot leave the hive, we feed it its own Melipona honey, not sugar water.

We do not move the hives from their position to follow crops.

Prevent Poverty and Deforestation

Traditionally the honey is harvested by cutting down the tree where the bees have made their hives.  This of course leads to deforestation and loss of the bee's and vanilla orchid habitat creating poverty in the environment and local economy.

You can be part of the solution. 


From one hive and one already fallen tree we can reproduce the queen to create new colonies and make dozens of hive boxes to distribute to the community at a cost of approximately $100.00 Canadian, preventing deforestation and the extermination of the noble little bee.

Our program includes establishing nurseries for the Jonote tree. A fast-growing, species, jonote grows opportunistically in shaded coffee orchards, where farmers use them for some years as shade plants for coffee.


Once the trees start growing too large and competing with the coffee plants, they must be cut down. 

This creates new employment opportunities and revenue stream for these economically marginalized communities.
