Cinnamon has a naturally warming quality, which has made it valuable for the treatment of the common cold and various forms of the flu for generations. This warming ability can help fevers “break” and also prevent the onset of chills or pneumonia in cases of bronchitis, due to its stimulating effect on the respiratory system.

 

Mexican cinnamon (Cinnamomum verum), actually the bark of a tree, is a type of cinnamon from Sri Lanka called Ceylon, but known as canela in Mexico. It is often considered “true” cinnamon, whereas the relative cassia, a much more widely marketed cinnamon common in the United States, is a native of Indonesia and has a harsher flavor. Canela is much softer and flakier than cassia as well, and is easier to grind into a fine powder. In fact, it will crumble between your fingers.

 

Why is Mexican Cinnamon different? There's a real difference between the authentic and the store-bought taste. The distinct flavor of Mexican cinnamon is bold and sweet. It's difficult to describe... you'll just have to taste it yourself!

 

We are creating a Cinnamon Zone in the Totonacapan Region of Mexico where the cinnamon trees can also be pollinated by the Melipona Stingless Bee, the pollinator of the Vanilla Orchid.

 

This project creates a new revenue source for the impoverished region and helps us repopulate the bee colonies.

    Ceylon cinnamon or canela is native to Sri Lanka and the southwest coast of India. It it now cultivated in Mexico in places such as Puebla, Veracruz, Tabasco.

     

    Our cinnamon is cultivated in the Totonacapan Region by the Totonaco People.  We help organize co-ops to create economic activities for the local families. 

     

    Cinnamon does not require large extensions of rain forest to be cleared for production and provides ten times more revenue for the people than clearing hectares of jungle to plant corn.
